I really never had a recipe, just my own creation, so here goes.
Bake 10 potatoes until soft and let cool.
Cut in half and remove insides, leaving skins intact.
Add to “insides” of potatoes
¼ cup milk
1 small (8 oz.) container of sour cream
1 cup grated cheese
2 tablespoons margarine
Mash potatoes with mixer. May need to add ¼ more cup of milk to get to right texture, they should look like mashed potatoes.
Stuff back into potato skins.
Bake, covered at 325 degrees until warm and bubbly.
Top with sautéed mushrooms and crumbled crisp bacon. Can also add chives, if desired.
Amazing! And on Thanksgiving, we call them fat free. ☺
