
Ingredients: 1 can chicken broth, 1 can vegetable broth, 1 can beef broth, 1 can green chile enchillada sauce, 1 small can diced green chiles, 1 can diced stewed tomatoes, 1 can green beans, 1 can corn, 1 large baking potato (cubed), 1 large carrot (sliced) 1 tablespoon lime juice. Cubed beef or chicken may be added if desired.
Directions: In one pan, boil potatoes and carrots until cooked. In one large stockpot, combine all other ingredients, juices included. Add cooked potatoes adn carrots. Bring to boil, then simmer (partially covered for 5 minutes).
This recipe is healthy. If thickening is desired, add 1/4 to 1/2 cup of instant mashed potato flakes. Diced, cooked sweet onions also add flavor, if desired.
